LASAGNA

This recipe comes from my sister, Terri.  I can't remember where she got it, but I think it might have been from a cookbook.  She first made it for her boyfriend, Michel, when she invited him over to dinner with the family.  This was back in 1988, so this recipe has been around awhile.  They would marry a short time later and are still together to this day.  I then made it for Jesse the first time I invited him over for dinner with the family.  It was 'as a friend' because he wasn't quite ready to take the next step.  My beloved sister then proceeded to show off her piano skills and played the wedding march on the piano to my horror and Jesse's embarrassment!  But, within a month we were living together, engaged and had named our first two children, Jaqlyn and Jesse Jr.  22 years later, we are still together and going strong!  So, it's a family joke that my sister and I seduced our husbands with this lasagna-LOL!

I haven't made this in years, if I even have since that first time I made it for Jesse, so this should be interesting!

Ingredients:

1 lb hamburger
6 oz ground pork
3/4 cup chopped onion
1 clove garlic, minced
1 can (16 oz) whole tomatoes
1 can (15 oz) tomato sauce
2 tbsp parsley flakes
2 tbsp sugar
1 tsp salt
1 tsp basil leaves
3 cups cottage cheese
1/2 cup Parmesan cheese
1 tbsp parsley flakes
1 and 1/2 tsp salt
1 tsp oregano leaves
1 pkg (8 oz) lasagna noodles
3/4 lb shredded mozarella
1/2 cup Parmesan cheese


Cook beef, sausage, onion and garlic till brown.


Add tomatoes.  Break up with a fork.


Add tomato sauce, 2 tbsp parsley flakes, 2 tbsp sugar, 1 tsp salt, 1 tsp basil leaves.


Bring to a boil.  Simmer for one hour.


Preheat over to 350 degrees.  Prepare lasagna noodles per package directions.  


Mix cottage cheese, 1/2 cup Parmesan cheese, 1 tbsp parsley flakes, 1 and 1/2 tsp salt and 1 tsp oregano.

Reserve 1/2 cup meat sauce.  In 9 x 13 pan, layer noodles, remaining meat sauce, mozzarella and  cottage cheese mixture.  Total of 3 layers.


Spread 1/2 cup meat sauce over top.  Sprinkle with 1/2 cup Parmesan cheese.


Bake 45 minutes uncovered.  If refrigerated add 10-15 minutes to baking time.  Make one 9x13 pan.

I am seriously hungry now that this is out of the oven and cooling a little.  I can't wait to dig in!

PORK CHOW MEIN This is a simple Pork Chow Mein recipe I developed using a La Choy canned chow mein meal.  We used to just use the canned chow mein as is, but as our tastes have changed, we wanted more flavor, more complexity.  So, by adding fresh pork (chicken or beef would work, too) and some fresh veggies, we made a much better meal! SWEDISH MEATBALLS There was several different kinds of meatballs at a recent holiday potluck I was at and I found myself checking them, trying to determine if they were homemade or pre-made frozen ones (i.e. Simek's).  At one time I thought the pre-made ones were great, but my tastes have matured.  Now I can't stand them!  Thus, I find myself being picky at a potluck-LOL!  Thankfully, for once, two of the three were homemade.  Yey!
