APPLESAUCE BREAD PUDDING

Bread pudding was a childhood favorite dessert of mine.  My mother gave me this recipe.  I don't know if it is her own or her Mom's or Mother-in-Law's.  Jesse has never cared for bread pudding and because Dad doesn't like it, the kids won't try it.  I think Jaqi might try it this time, though.  A couple of years ago around Thanksgiving I decided I was making it for myself anyway and freezing it for enjoyment later.  OH, how I LOVED it!  I'm not sure why it's taken me almost two years to do it again?  It's not difficult.  Probably because I feel a little guilty making something just for me.  I know, lame, right?  But true of many mothers everywhere.....

Ingredients:
5 cups soft bread crumbs
3 cups scalded milk
1 cup applesauce
1 cup sugar
1 cup raisins (optional)
1/2 cup margarine
3 eggs
1/2 tsp vanilla
1/2 tsp nutmeg
1 tsp cinnamon


I took some cinnamon bread we happened to have that was getting old, plus about 8 slices of wheat bread (including end pieces) and broke them into pieces.

Next, scald the milk.  I din't know how to do this, so did a quick web search: http://www.wikihow.com/Scald-Milk.
Actually, it was something I had done before, I realized, but just very rarely.


Combine the bread crumbs and scalded milk in a large bowl and mix until crumbs are thoroughly soaked.


Add the remaining ingredients and mix well:


Spoon into a greased 2 quart baking dish:


Bake at 350 degrees for 1 1/2 hours (90 minutes), or until knife inserted 1" from edge comes out clean. Makes 6-8 servings.  Here it is fresh out of the oven:


It sure made the house smell wonderful!  Here is a piece all cut up and ready to eat!


Tomorrow, we have some chuck steak we need to use up, so I am going to take the two recipes below and play with them to create my own version of Red Sauce Beef Stroganoff.  Never made it before, but it is always fun to create something new.

Also, might have to make a new batch of my version of Rice Krispie Bars. Jaqi made two batches last night, but they are going to the Fantasy Football Draft at Bill's tonight with Jesse.  If they all go, the family will want more.  After all, the Bread Budding is MINE!  Hmmmmm....suddenly, I don't feel so guilty anymore.....

HAMBURGER GRAVY Being a gloomy Saturday, Jesse & I were too lazy to go out to the grocery store, so had to come up with a dinner with what we had on hand.  This is a favorite and is made often in our household.  So easy to make, but very tasty.  I never make this recipe the same way twice because I use whatever I have on hand.  The basics are ground beef, browned with onions and minced garlic.  Add some kind of liquid: beef broth, milk, cream of mushroom (with milk added), etc. Get it simmering and add a thickening agent.  This time we had no beef broth or bouillon, so used a brown gravy packet mixed with water and added a little chicken broth to that.  Also added some milk.  When you use just broth, it is a lighter gravy.  If you add milk and/or cream of mushroom, it is a little creamier.  You can even add a little sour cream and make it a little more like stroganoff.  Serve over egg noodles, rice, mashed potatoes, toast or ...
FIRE CRACKERS I got the recipe from here:  http://www.food.com/recipe/fire-crackers-423316 1 lb unsalted saltine crackers (4 sleeves) 1 cup canola oil 1 (1 oz) package ranch dressing mix 2 tbsp crushed red pepper flakes 1/2 teaspoon garlic powder Line crackers on ends (like dominoes) in an air-tight container. In a small bowl, mix oil, dressing mix, peppers and garlic powder.  Stir until ingredients are well mixed.  Continue to stir to prevent the peppers from settling on the bottom of the bowl. Spoon mixture over crackers, like drizzling icing on a cake. Close lid tightly and flip the container over every 5 minutes for 20 minutes.  Lightly shake back and forth to make sure all the crackers are coated.  Store in a Ziploc bag.  Will keep for about a week. Pretty tasty!  Jaqi & Jesse like them too!
