APPLESAUCE BREAD PUDDING

Bread pudding was a childhood favorite dessert of mine.  My mother gave me this recipe.  I don't know if it is her own or her Mom's or Mother-in-Law's.  Jesse has never cared for bread pudding and because Dad doesn't like it, the kids won't try it.  I think Jaqi might try it this time, though.  A couple of years ago around Thanksgiving I decided I was making it for myself anyway and freezing it for enjoyment later.  OH, how I LOVED it!  I'm not sure why it's taken me almost two years to do it again?  It's not difficult.  Probably because I feel a little guilty making something just for me.  I know, lame, right?  But true of many mothers everywhere.....

Ingredients:
5 cups soft bread crumbs
3 cups scalded milk
1 cup applesauce
1 cup sugar
1 cup raisins (optional)
1/2 cup margarine
3 eggs
1/2 tsp vanilla
1/2 tsp nutmeg
1 tsp cinnamon


I took some cinnamon bread we happened to have that was getting old, plus about 8 slices of wheat bread (including end pieces) and broke them into pieces.

Next, scald the milk.  I din't know how to do this, so did a quick web search: http://www.wikihow.com/Scald-Milk.
Actually, it was something I had done before, I realized, but just very rarely.


Combine the bread crumbs and scalded milk in a large bowl and mix until crumbs are thoroughly soaked.


Add the remaining ingredients and mix well:


Spoon into a greased 2 quart baking dish:


Bake at 350 degrees for 1 1/2 hours (90 minutes), or until knife inserted 1" from edge comes out clean. Makes 6-8 servings.  Here it is fresh out of the oven:


It sure made the house smell wonderful!  Here is a piece all cut up and ready to eat!


Tomorrow, we have some chuck steak we need to use up, so I am going to take the two recipes below and play with them to create my own version of Red Sauce Beef Stroganoff.  Never made it before, but it is always fun to create something new.

Also, might have to make a new batch of my version of Rice Krispie Bars. Jaqi made two batches last night, but they are going to the Fantasy Football Draft at Bill's tonight with Jesse.  If they all go, the family will want more.  After all, the Bread Budding is MINE!  Hmmmmm....suddenly, I don't feel so guilty anymore.....

FIRE CRACKERS I got the recipe from here:  http://www.food.com/recipe/fire-crackers-423316 1 lb unsalted saltine crackers (4 sleeves) 1 cup canola oil 1 (1 oz) package ranch dressing mix 2 tbsp crushed red pepper flakes 1/2 teaspoon garlic powder Line crackers on ends (like dominoes) in an air-tight container. PEANUT BUTTER RICE KRISPIE BARS My mother always put peanut butter into her Rice Krispie bars. When I made them when I was older I had to guess each time how much.  I finally figured out what worked and wrote it down so it wasn't a guessing game. People compliment me on these all the time when I bring them places.  They are not as cloyingly sweet as some Rice Krispie bars can be.  First, I always use the original Kellogg's Rice Krispie bar recipe, never a generic version.  The other versions tend to have the same amount of marshmallows, more butter,  but less rice krispies making them sweeter (to me, anyway).  I don't care what brand of rice krispies I use, I buy whatever is cheapest, but it has to be the original Kellogg recipe.  Second, I always add the peanut butter. SUMMER SPAGHETTI SALAD It's a beautiful Sunday in Minnesota!  60 degrees for the first time since October!  Still snow on the ground, but everyone is getting out of the house and firing up the grills and making summer-like foods.  This is an old classic from my sister.  Usually, I use spaghetti noodles, but today tried linguine noodles.  Also added ranch seasoning, something new.  It's a nice refreshing pasta salad. Ingredients: 1 lb Spaghetti (or linguine) 1 lb bag California mix frozen veggies (broccoli, cauliflower, carrots) 1 can black olives, sliced 4 Roma tomatoes, chunked or diced (or about 1 cup of whatever tomatoes you want to use) Approx 1/4 cup Italian Dressing Approx 1/2 cup Mayo Approx 1/2 cup Miracle Whip Approx 2 tbsp dry Ranch Dressing mix Appox 1/4 cup Parmesan cheese Salt,  Pepper,  Lawry's Seasoning Salt,  Garlic Salt,  Onion Powder &  Garlic Powder, to taste Seasonings and vegetables...
