APPLESAUCE BREAD PUDDING

Bread pudding was a childhood favorite dessert of mine.  My mother gave me this recipe.  I don't know if it is her own or her Mom's or Mother-in-Law's.  Jesse has never cared for bread pudding and because Dad doesn't like it, the kids won't try it.  I think Jaqi might try it this time, though.  A couple of years ago around Thanksgiving I decided I was making it for myself anyway and freezing it for enjoyment later.  OH, how I LOVED it!  I'm not sure why it's taken me almost two years to do it again?  It's not difficult.  Probably because I feel a little guilty making something just for me.  I know, lame, right?  But true of many mothers everywhere.....

Ingredients:
5 cups soft bread crumbs
3 cups scalded milk
1 cup applesauce
1 cup sugar
1 cup raisins (optional)
1/2 cup margarine
3 eggs
1/2 tsp vanilla
1/2 tsp nutmeg
1 tsp cinnamon


I took some cinnamon bread we happened to have that was getting old, plus about 8 slices of wheat bread (including end pieces) and broke them into pieces.

Next, scald the milk.  I din't know how to do this, so did a quick web search: http://www.wikihow.com/Scald-Milk.
Actually, it was something I had done before, I realized, but just very rarely.


Combine the bread crumbs and scalded milk in a large bowl and mix until crumbs are thoroughly soaked.


Add the remaining ingredients and mix well:


Spoon into a greased 2 quart baking dish:


Bake at 350 degrees for 1 1/2 hours (90 minutes), or until knife inserted 1" from edge comes out clean. Makes 6-8 servings.  Here it is fresh out of the oven:


It sure made the house smell wonderful!  Here is a piece all cut up and ready to eat!


Tomorrow, we have some chuck steak we need to use up, so I am going to take the two recipes below and play with them to create my own version of Red Sauce Beef Stroganoff.  Never made it before, but it is always fun to create something new.

Also, might have to make a new batch of my version of Rice Krispie Bars. Jaqi made two batches last night, but they are going to the Fantasy Football Draft at Bill's tonight with Jesse.  If they all go, the family will want more.  After all, the Bread Budding is MINE!  Hmmmmm....suddenly, I don't feel so guilty anymore.....

CHICKEN ALFREDO BAKED ZITI We were going to visit relatives at their lake place and they wanted pasta for dinner, like Alfredo.  Jesse said I make really good red sauces, but have never made a great white sauce.  I kind of agreed - it just wasn't something I did often because when I had it wasn't really special enough to stand out. Never to be discouraged, I did a little research and found some recipes for Chicken Alfredo Baked Ziti.  Using ziti in a casserole version fit our purposes, rather than fettuccine with Alfredo sauce.  Using ideas from two pins  (see Pinspirations at bottom) , I created my own .  I made each component and stored them separately  overnight.  In the morning I layered them in a cake pan and packed them in the cooler to be made that evening in the oven. SWEDISH MEATBALLS There was several different kinds of meatballs at a recent holiday potluck I was at and I found myself checking them, trying to determine if they were homemade or pre-made frozen ones (i.e. Simek's).  At one time I thought the pre-made ones were great, but my tastes have matured.  Now I can't stand them!  Thus, I find myself being picky at a potluck-LOL!  Thankfully, for once, two of the three were homemade.  Yey!
